Brittle is one of the easiest candies to make, and the key is to have an accurate thermometer. If you’re not sure, bring a pot of water to a boil and stick the thermometer in. It should read 212ºF. If it doesn’t, just remember how many degrees up or down it is from there and adjust your recipe temperature to compensate.
Ingredients
- 1 cup sugar
- ½ cup light corn syrup
- ¼ cup water
- 1 tablespoon butter
- 1½ cups untoasted sesame seeds
- 1½ teaspoons baking soda
Instructions
Grease a baking sheet with butter or shortening; set aside.
In a medium saucepan, stir together the first four ingredients and bring mixture to a boil over medium-high heat. Cook until a candy thermometer registers 245ºF.
Stir in sesame seeds and continue cooking until thermometer reaches 295ºF. Add baking soda and cook until golden brown, about 2 minutes.
Immediately pour mixture onto prepared pan and quickly spread evenly. Allow cooling for at least one hour before cracking into pieces.
