This quick bread is a great start to any morning. Whether straight from the oven, toasted or packed in a lunch, this moist bread is sure to please.
Ingredients
- 1 cup gluten-free all-purpose baking flour*
- ½ teaspoon baking soda
- 1/8 teaspoon salt
- 1 cup mashed very ripe bananas
- ½ cup egg substitute
- ½ cup sugar
- ¼ cup unsweetened applesauce
- 3 tablespoons canola oil
- ½ teaspoon vanilla extract
- ¼ cup chopped pecans, toasted
Instructions
Preheat oven to 350ºF. Lightly grease an 8- x 4-inch loaf pan.
In a large bowl, whisk together flour, baking soda and salt.
In a separate bowl, whisk bananas and the next five ingredients. Add to dry ingredients along with pecans and stir until combined. Pour into loaf pan.
Bake at 350° 45 to 50 minutes or until a toothpick inserted in center comes out clean. Cool on wire rack 10 minutes then remove from pan and cool completely.
