If you like chewy oatmeal cookies then you’ll love these! Note: The dough is wet, but don’t be tempted to add more flour or oats.

Ingredients

  • 1 cup real maple syrup
  • 1 cup mashed banana
  • ½ cup canola oil
  • 2 teaspoons orange zest
  • 1 teaspoon vanilla extract
  • 3 cups regular rolled oats
  • 1½ cups gluten-free all-purpose flour*
  • ½ teaspoon xanthan gum
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup dried cranberries

Instructions

Preheat oven to 375ºF. Line baking sheets with parchment paper or lightly grease with vegetable cooking spray. 

In a small bowl, whisk together maple syrup and next four ingredients; set aside.

In a large bowl, stir together oats and next six ingredients.

Add wet ingredients and stir to combine. Drop by rounded tablespoonfuls onto prepared baking pans.

Bake the cookies for eight to ten minutes or until the edges start to turn brown.

Cool in pan 5 minutes and then transfer to a wire cooling rack to cool completely.
