You may be surprised to learn that this childhood favorite is dairy, gluten and nut free and can actually be part of a healthy diet with a few minor additions.

Trick: Try adding your child’s favorite dried fruits, such as cranberries, raisins, currants, chopped figs or strawberries.

Ingredients

  • 3 tablespoons dairy-free margarine
  • 1 (10-oz.) package marshmallows
  • 6 cups crisp rice cereal
  • ½ cup chopped dried apricots
  • ½ cup dried cherries

Instructions

Lightly grease a 13- x 9-inch baking pan with cooking spray and set aside.

Melt butter and marshmallows in a large saucepan over medium heat. When marshmallows are just melted, remove from the heat and stir in remaining ingredients.

Quickly transfer mixture to prepared pan and press into an even layer.  Allow mixture to cool at least 30 minutes before cutting.

To serve, cut into 20 bars and store in an airtight container at room temperature.
