Ingredients

  • 4 ounces hazelnuts, roughly chopped
  • 4 cups arugula, washed
  • 2 large oranges, segmented
  • 1/2 red onion, sliced
  • 3 tablespoons orange juice
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tsp. white sugar

Step by Step:

  1. Preheat the grill. Place the orange segments on a greased baking tray and sprinkle a pinch of sugar on top of each segment. Place on the grill for 2 minutes.
  2. Whisk the juices, oil, and vinegar together in a small bowl and set aside. Arrange the arugula on four salad plates followed by the red onion, warm oranges, and hazelnuts. Drizzle the dressing on top and serve immediately.
