Sabudana is a light-meal choice for all fasting days. Sabudana, also known as Tapioca, makes a great Khichdi. Tapioca Khichdi is great for a delicious breakfast or snack. This recipe is mildly spiced and groundnuts give it a light crunch. Be sure not to soak the Sabudana for too long or in too much water, or you will get starchy mush. On the other hand, a little less water and it will roll off your palm like balls of mercury.

  • 8 ounces Sago (Sabudana)
  • 2 ounces crushed groundnuts (coarse)
  • 4 to 5 green chilies
  • 1 medium potato
  • 3 tbsp. ghee
  • 1 sprig curry leaves
  • 1 tsp. cumin seeds
  • Salt to taste
  • 1 tsp. lemon juice
  • 2 tbsp. fresh coconut, scraped
  • Fresh cilantro leaves (a few sprigs), finely chopped

Step by Step:

  1. Wash Sabudana two to three times and soak in one cup water for three to four hours. Sabudana grains should be separate and moist.
  2. Wash green chilies, remove stem, and then chop finely. Peel and wash the potato and cut into 1/2 cm. cubes.
  3. Heat ghee in a pan. Add curry leaves, cumin seeds, and chopped green chilies. When cumin seeds crackle, add the potato cubes. Cook till the potatoes are done.
  4. Add Sabudana, scraped coconut, and crushed ground nuts. Sauté for four to five minutes, stirring well. Sprinkle a little water, then add salt and lime juice. Mix well. Remove from heat.
  5. Garnish with the cilantro leaves and serve hot with a cup of thick yogurt.
