  • 4 1/2 ounces plain flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 3/4 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 1/8 tsp. salt
  • 3 tablespoons margarine
  • 3 1/2 ounces white sugar
  • 1/2 an egg, beaten
  • 1 large parsnip, cooked and mashed
  • 1/2 tsp. vanilla essence

Step by Step:

  1. Preheat the oven to 350°F.
  2. Combine the flour, baking powder, baking soda, spices, and salt in a large mixing bowl and set aside.
  3. In a medium bowl, cream together the margarine and sugar until smooth. Add the remaining ingredients and beat until smooth. Fold in the dry ingredients one dessert spoon at a time.
  4. Use a tablespoon to drop 12 equal spoonfuls of cookie mixture onto a baking sheet. Flatten and shape with the back of the spoon and bake for 15 to 20 minutes.
