Leftover chicken breast finds a happy home in this delicious take-along lunch. Make it in the evening so that the flavors meld overnight. Add a sweet apple and a handful of blueberries for dessert, and lunch at the office becomes an anticipated event.

  • 2 cups cooked chicken breast, shredded
  • 1/4 cup chopped water chestnuts
  • 1/4 cup chopped almonds
  • 2 scallions, white part only, diced
  • 1/8 teaspoon sea salt
  • 1/4 cup paleo mayo
  • 1 clove garlic, minced
  • 1/4 tsp. grated ginger
  • 6 leaves butter lettuce, cleaned and dried
  • Fresh mint and basil, chopped, to taste

Step by Step:

  1. In a medium-sized bowl, mix together chicken and the next four ingredients.
  2. In a small bowl, blend mayo, garlic, and herbs. Add to chicken mixture and mix well. Refrigerate until chilled or overnight.
  3. Place lettuce leaves on plate. Spoon chicken salad evenly between lettuce leaves, centering it along the rib.
  4. Gently roll leaves and serve.
