Kippers, or smoked herring, is an excellent source of Omega-3 fatty acid and makes a great alternative to tuna. The smokiness adds a special flavor to this salad, which can be served on top of mixed greens or spread onto whole grain bread.

  • ½ cup reduced-fat mayonnaise
  • 1 small onion, finely chopped
  • 1 celery stalk, finely chopped
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon juice
  • 1 clove garlic, minced
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 1 (6-ounce) can kippers, drained

Step by Step:

  1. In a medium-sized bowl, stir together first eight ingredients. Add flaked kippers and gently toss to combine. Refrigerate until ready to serve.
