  • 1/3 cup light brown sugar
  • 1/3 cup water
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup unsweetened applesauce
  • 2 tablespoons bourbon whiskey
  • 2 tablespoons ketchup
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 1 teaspoon minced garlic
  • 1/2 teaspoon dried ginger
  • 1 1/2 pounds boneless, skinless chicken breasts, cubed

Step by Step:

  1. Stir together brown sugar and next 7 ingredients. Set aside.
  2. In a large skillet, heat oil over medium-high heat. Add bell pepper and onion and cook until tender, about 3 minutes. Stir in garlic and ginger and cook 30 seconds. Add chicken and cook, stirring occasionally, until almost cooked through, about 4 minutes.
  3. Stir in brown sugar mixture and bring to a simmer. Cook until chicken is just cooked and mixture thickens slightly, about 10 minutes.
