In most parts of the country butter beans and lima beans are one and the same. However, you may have some difficulty finding the dried variety labeled as butter beans. If you can't find either, almost any variety of dried white beans will work nicely.

  • 1 lb. dry lima beans
  • 4 cups water
  • 3/4 lb. lean ham, diced
  • 5 carrots, chopped
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable stock
  • 4 cups water

Step by Step:

  1. In a large Dutch oven or stock pot, bring 4 cups of water and lima beans to a boil over high heat. Boil 2 minutes, remove from heat, cover, and let stand 1 hour. Drain and rinse in a colander.
  2. Spray Dutch oven with vegetable cooking spray, add ham, and cook over medium-high heat until ham is golden brown, about 5 minutes. Remove ham and add carrots, onion, and celery. Cook until onion is translucent, about 5 minutes. Add drained lima beans, stock, and water and bring to a boil. Reduce heat and simmer gently uncovered, for about 90 minutes or until beans are tender. Add reserved ham and serve immediately.
