Ingredients

  • 1 tablespoon olive oil
  • 12 ounces cold, cooked roasted potatoes, 1/4 " slices
  • 8 ounces cold, cooked cabbage
  • 2 bacon slices, diced
  • 1 white onion, thinly sliced
  • 1 garlic clove, minced
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh parsley
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Step by Step:

  1. Heat the oil in a large frying pan over a medium heat. Add the bacon and onion and fry for 3-5 minutes. Add the garlic and fry for a further 2 minutes.
  2. Add the remaining ingredients and cook for 5 minutes or until golden brown on the bottom. Flip the vegetables and cook for 5 more minutes.
