Ingredients

  • 3/4 cup non-fat plain Greek-style yogurt
  • 2 Tbsp. mango chutney
  • 1 Tbsp. chopped fresh ginger
  • 1 Tbsp. chopped fresh cilantro
  • 3 cups chopped cooked chicken
  • 1/3 cup chopped dried apricot
  • 1/4 cup toasted slivered almonds
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 8 Bibb lettuce leaves

Step by Step:

  1. Whisk together first 4 ingredients in a large mixing bowl. Stir in chicken and next 4 ingredients. Cover and chill until ready to serve. Divide salad evenly among Bibb lettuce cups.
