Ingredients
- 3/4 cup non-fat plain Greek-style yogurt
- 2 Tbsp. mango chutney
- 1 Tbsp. chopped fresh ginger
- 1 Tbsp. chopped fresh cilantro
- 3 cups chopped cooked chicken
- 1/3 cup chopped dried apricot
- 1/4 cup toasted slivered almonds
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 8 Bibb lettuce leaves
Step by Step:
- Whisk together first 4 ingredients in a large mixing bowl. Stir in chicken and next 4 ingredients. Cover and chill until ready to serve. Divide salad evenly among Bibb lettuce cups.
