  • 1/4 pound unsalted butter
  • 3/4 cup packed brown sugar
  • 2 tbsp. ground flaxseed & 6 tbsp. warm water
  • 1/2 cup chocolate chips
  • 1/2 tsp. cinnamon
  • 2 tsp. vanilla extract
  • 11/2 cups whole grain flour
  • 1 tsp. baking powder
  • Salt to taste
  • 1/2 cup chopped almonds

Step by Step:

  1. Preheat oven to 375°F.
  2. In a blender, mix the ground flaxseed and water until it's frothy and set aside. Now using a food processor pulse the room temperature butter to cream it. Add the sugar and blend until fluffy. Now add the flaxseed mixture to the processor and blend ingredients together. Finally add the vanilla extract and cinnamon and mix well.
  3. Whisk the flour, baking soda and salt in a bowl. Add the dry ingredients to the wet and pulse the processor until the mixture begins to form into a dough ball. Place the dough into a bowl, add the chocolate chips and nuts. If you find the dough to be too soft, cover and refrigerate it for about 30 minutes or until it forms a firm dough.
  4. Lightly grease a baking tray with butter and drop about 2 tablespoon dough balls on the baking sheet (make sure you leave plenty of space in between the cookies). Bake them in batches for about 8 - 10 minutes or until the cookies turn golden brown.
  5. Let the cookies cool for 5 minutes before serving!
