  • 4 large egg whites, at room temperature
  • 1/4 tsp. salt
  • 3/4 cup sugar
  • 4 ounces bittersweet chocolate, finely chopped
  • 1/2 cup finely chopped unsalted roasted pistachios
  • 1/3 cup finely chopped dried cranberries

Step by Step:

  1. Beat egg whites in the bowl of an electric mixer on medium speed just until soft peaks form. Gradually add sugar, beating until whites are glossy and stiff peaks have formed, about 3 minutes.
  2. Gently fold in chocolate, pistachios, and orange peel. Drop mixture by tablespoonfuls 1 inch apart on parchment paper-lined baking sheets.
  3. Bake at 250°F for 50 minutes or until meringues set and are just beginning to turn pale gold. Turn off oven, leaving cookies inside, 4 to 12 hours or until cookies are dry in the center. Store airtight containers.
