What's great about this salad is you can easily substitute whatever fresh fruits or vegetables are in season. Try adding some diced mangoes or papaya in place of the cucumber.

Ingredients

  • 1 rotisserie cooked chicken
  • 1 roasted red bell pepper, diced
  • 1 small red onions, finely diced
  • 1 small cucumber, diced
  • 1 cup diced fresh pineapple
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup fresh lime juice
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup finely chopped chives
  • 1 teaspoon lime zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper

Step by Step:

  1. Remove skin and bones from chicken and shred meat into bite-size pieces and place in a large bowl.
  2. Add remaining ingredients and toss well. Refrigerate until ready to serve.
