Rich, tart buttermilk gives biscuits a wonderful flavor, but this recipe is lighter, low-fat version. Serve these biscuits any time of day: with eggs and sausage in the morning or in place of rolls at the dinner table.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 8 tablespoons trans fat-free margarine
  • 1 egg
  • 3/4 cup low-fat buttermilk
  • 1/3 cup chives, minced

Step by Step:

  1. Preheat oven to 400°F. Lightly grease a baking sheet with cooking spray.
  2. In a large bowl, combine flour, baking powder, baking soda, and salt and stir to mix.
  3. Cut margarine into the dry ingredients using a pastry cutter or butter knife, until the margarine is reduced to small, pea-sized chunks.
  4. In a small bowl, whisk together the egg and buttermilk. Add the egg mixture to the flour mixture and stir just to combine (don't overmix). Dough will be sticky. Add chives and mix lightly to distribute.
  5. Turn dough out onto a lightly floured surface and roll out to about 1/2 inch thick. Use a round cookie cutter (about 2 inches in diameter) to cut circles into the dough. Place the dough circles on the baking sheet.
  6. Bake for about 15 minutes, until the top and edges turn golden brown. Transfer to a cooking rack to cool. Serve warm or at room temperature.
