  • 1/2 teaspoon freshly cracked pepper, divided
  • 1 (4-5 pound) whole chicken, cut into pieces
  • 1/2 cup all-purpose flour
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 pound assorted mushrooms, chopped
  • 1 (10-ounce) bag frozen pearl onions, thawed
  • 1 teaspoon minced garlic
  • 11/2 cups reduced-sodium chicken broth
  • 2 tablespoons white balsamic or red wine vinegar
  • 1/2 teaspoon fresh chopped rosemary leaves
  • 1/8 teaspoon salt

Step by Step:

  1. Sprinkle 1/4 teaspoon pepper over chicken pieces. Toss with flour. In a large Dutch oven over medium-high heat, brown chicken in oil; remove and set aside.
  2. In same pan, add onion and cook 3 – 4 minutes or until tender. Add mushrooms and cook until browned, about 8 – 10 minutes. Stir in pearl onions and broth, stirring to release any browned bits on the bottom of the pan. Add chicken and bring mixture to a gentle simmer.
  3. Cook, covered, 45 to 55 minutes or until chicken is cooked through and pearl onions are tender.
  4. To serve, remove chicken from pan and set aside. Add vinegar and rosemary to mushroom mixture and season to taste with salt and remaining pepper. Divide mixture evenly among large, warmed bowls and top with chicken.
