  • 6 boneless, skinless chicken breasts
  • 1/2 tsp. garlic salt
  • Freshly cracked black pepper, to taste
  • 1 Tbsp. olive oil
  • 1 onion, thinly sliced
  • 1/2 cup balsamic vinegar
  • 1 (14.5-ounce) can low-sodium diced tomatoes
  • 2 tsp. dried Italian seasoning

Step by Step:

  1. Season chicken breasts with garlic salt and pepper. Heat olive oil in a medium skillet, and brown the onion and seasoned chicken breasts.
  2. Add tomatoes, vinegar, and Italian seasoning, turning chicken to coat. Cover, and simmer until chicken is cooked through, 10 to 15 minutes.
