Green Cooking and Eating Tips

Tara Gidus, MS, RD, CSSD, LD/N
Earth Day is less than a week away now, so let's get ready to green it up!

I told you last week about the Big Green Cookbook by Jackie Newgent, RD. If you are interested in becoming more eco-friendly in how you cook, this book is a must have!

I have been on the search for companies that follow green practices and help us to be more green, too. Here are a few of my finds.

ScanPan
ScanPan is an eco-friendly line of non-stick cookware made with recycled aluminum and is 100%A free of PFOA, a potentially toxic chemical found in most non-stick pots and pans. The liner in these non-stick pans is made from ceramic titanium which is durable and can't be damaged by metal utensils. You can find ScanPan at Sur La Table stores or at chefscatalog.com

Gourme Mist
Gourme Mist are eco-friendly because you replace aerosol sprays which can have propellants which can be harmful to the environment. They are made with all natural ingredients and are in a PET plastic container that is 100% recyclable. You end up using less oil when you mist instead of using the pour spout oil. In addition to oil, these come in vinegar flavors like raspberry, pomegranate, and balsamic to flavor just about anything! You can purchase them online or find a store near you that carries them at gourmemist.com. A lot of health food stores carry them.

Seeds of Change
Seeds of Change is an organic line of foods that are just so tasty! The company's mission is to preserve biodiversity and they donate 1% of net sales to promote sustainable organic agricultural practices. All of their foods are certified organic. Here are some of my favorites to cook with:
• Microwaveable Rishikesh Brown Basmati Rice
• Microwaveable Uyuni Quinoa & Whole Grain Brown Rice
• Microwaveable Arroz Hispaniola Caribbean Red Beans & Brown Rice
• Jalfrezi Simmer Sauce
• Tikka Masala Simmer Sauce
All of the microwaveable rices are 90 seconds and you can recycle the bag. You can buy these are most major grocery stores or at health food stores.

SunChips
Who doesn't love a good chip? I include SunChips in my category of eating green because Frito Lay and especially the SunChips brand is making great strides to become more green in their practices. SunChips has a plant in Modesto, CA that is literally powered by the sun (solar energy). The SunChips bag size has been reduced to save packing material (but not less chips!) and is made from 33% recycled material. By Earth Day 2010 they will have a 100% compostable bag which will disintegrate in a compost pile in 14 weeks. Oh, and there are 18 grams of whole grain and they are just yummy! They have some great info on their website on green living so check it out!
